The Wine Guy
A Cleveland Ohio Native, Ryan Plas has been in the food and beverage industry for over 10 years. He cut his teeth working in the French quarter and later helped to open new restaurants and consequently has worked the entire FOH spectrum. His time at Stella! laid down a huge foundation of wine knowledge and steps of service. While working with John Mitchel's wine program as well as established servers and sommeliers, he was professionally trained from scratch about the world of wine. After coming to Coquette with considerable wine knowledge he took over the wine program in 2013.
Although he's earned a WSET Level 3 Award in Wine, Ryan still feels his “Wine Guy” title is fitting and makes him more approachable than traditional Sommeliers. He sees his staff and guests as fellow enthusiasts and mentors. He believes that table-side is the best place to observe what our guests gravitate to or what staff gets excited about sharing with them. He also highly values people’s opinions and is always ready to listen to and talk shop with guests.
Much like the food at coquette the wine program pulls inspiration from areas around the world with a particular focus on lesser known regions and sustainable farming. Rest assured if you don’t see something you know Ryan will have something similar, delicious and interesting!
